For a lighter Italian alternative to Christmas cake, the best panettone I've tried in recent years comes from the new Bottega del Sole in Fulham. Made by Mondi, a renowned café in Rome, it is sculpturally elegant and filled with almonds, hazelnuts and candied fruit soaked in Moscato wine.

Ingredients

Ingredients: Wheat flour, sultanas, 21%, egg yolks, butter, natural yeast (wheat flour, water), cane sugar, emulsifiers: E471, E322; grape juice, Moscato del Piemonte wine 2.2; fortified wine, inverted sugar syrup, cocoa butter, barley malt, salt, flavourings.

Ingredients for the icing and decoration: sugar, almonds, egg whites, 'hazelnuts from Piedmont' 1%, almonds armelline, rice flour.
