The Yirgacheffe variety is a real rarity and belongs to the premier class of coffee beans.

It is grown in the Gedeo zone about 400km south of Addis Ababa in Ethiopia. The hilly landscape, constant temperatures of around 18°C ​​and the particularly nutrient-rich soil ensure that the coffee cherries ripen slowly and evenly and thus for the complex aroma profile.

In terms of taste, the Yirgacheffe is characterized by a fine sweetness. Berry aromas of blackcurrants are clearly in the foreground and are harmoniously complemented by notes of chocolate and nuances of jasmine blossoms. On the tongue, this espresso is tangy and fresh and yet pleasantly low in acidity. The Yirgacheffe promises a culinary experience in a class of its own. Due to its complexity, it can be used in almost any type of preparation and always seems to develop new nuances. Whether from the portafilter, the French or Aeropress, whether with milk or as a pure espresso, the Yirgacheffe always impresses.

Ullrich Carroux obtains the Yirgacheffee green coffee directly from owner Hirut Berhanu's Dumerso Washing Station. With over 15 years of experience in the coffee trade, she is very familiar with the harvesting, washing and drying of the coveted beans. At harvest time, it employs over 400 local workers who - like 90% of the population in the Gedeo zone - are dependent on local coffee cultivation and trade. Through the cultivation and work on the coffee plantations, the farmers and workers not only finance the livelihood of their families, but also ensure reliable schooling and medical care in the region.

Ullrich Carroux and his son Laurens in the 2nd generation can already look back on many years of roasting experience. He has been roasting the Carroux premium espresso since 1998.
