In the days when coffee was still transported from India by sailing ship, it took several months to reach Europe. Because of the monsoon, the coffee was exposed to strong climatic variations during the journey and its original greenish or brownish colour was transformed into a yellowish white. It looked old, but had a distinctive flavour. This taste is still sought after and today, after harvesting, the grains are stored in well-ventilated buildings so that the monsoon can continue to exert its positive influence on the colour and quality of the grains.
